  • cinnamon - 1 tsp
  • salt - 1/2 tsp
  • nutmeg - 1/4 tsp
  • baking powder - 1 Tbsp
  • all-purpose flour - 1 c
  • firmly packed brown sugar - 1/3 c
  • orange juice - 1/2 c
  • whole wheat flour - 1/2 c
  • wheat germ - 1/2 c
  • medium banana, mashed - 1 item
  • margarine, melted and cooled - 1/3 c
  • vegetable oil spray - 1 item
  • egg substitute equal to 1 egg
  • fresh blueberries, rinsed and stems removed - 1 c

How to make blueberry banana muffins:

Preheat oven to 400°. Lightly spray muffin tins with vegetable oil. In a bowl, combine flours, sugar, wheat germ, baking powder, salt and spices. Stir until well mixed; set aside.

In another bowl, mash bananas. Add margarine, egg substitute and orange juice to it. Whisk until well blended. Stir banana mixture into dry ingredients, mixing just until moistened. (Mixture may be lumpy.) With rubber spatula, carefully fold blueberries into batter. Pour batter evenly into 12 muffin cups. Bake for 15 minutes. Serves 12 (1 muffin per serving).
