Blender potato soup
Ingredients/Components
- salt - 1/2 tsp
- chopped onion
- chopped fresh parsley - 1/4 c
- chopped celery - 3 c
- cans chicken broth - 3 1/2
- shredded Cheddar cheese - 1 item
- white pepper - 1/4 tsp
- minced garlic - 1/2 tsp
- Wesson oil - 1/2 c
- peeled, diced potatoes - 3 c
How to make blender potato soup:
In a large saucepan, in hot oil, saute celery, onion and garlic until tender. Stir in remaining ingredients except cheese. Bring to a boil, reduce heat and simmer, covered, 20 minutes or until potatoes are tender. Pour half the mixture into blender and puree until smooth. Repeat with remaining soup.
