  • coconut - 1 c

  • buttermilk - 1 c
  • baking powder - 2 tsp
  • raisins - 1/2 c
  • nuts, chopped - 1 c
  • allspice - 2 tsp
  • flour plain - 4 c
  • whole eggs - 6 item
  • blackberry jam - 2 c
  • Sift dry ingredients together

How to make blackberry jam cake:

Cream butter and sugar. Sift dry ingredients together. Beat eggs well together. Add dry ingredients to butter and sugar mixture alternately with buttermilk and beaten eggs. Add blackberry jam, nuts and vanilla. Grease and lightly flour four 9-inch cake pans. Pour in cake batter and bake at 350° for 45 minutes or until cake springs back from light pressure of finger.Filling:1 c. evaporated milk1 c. sugar3 egg yolks1/2 c. butter1 Tbsp. vanilla1 c. chopped pecans1/2 c. raisins1 c. coconut Cook milk, sugar, egg yolks, butter and vanilla and stir over medium heat until thickened, about 5 to 8 minutes. Add pecans, raisins and coconut. Beat until thick enough to spread between layers of cake.
