Ingredients/Components
- cinnamon - 1 tsp
- eggs - 5 item
- vanilla - 1 tsp
- chopped pecans - 1 c
- brown sugar
- butter - 1 c
- nutmeg - 1 tsp
- confectioners sugar
- buttermilk - 2/3 c
- baking soda - 1 tsp
- all-purpose flour
- can crushed pineapple - 1 1/2
- raisins - 1 c
- cream - 1/3 c
- cloves - 1 tsp
- white sugar - 1 c
- blackberry jam - 1 c
- Cream butter and sugar until light and fluffy
How to make blackberry jam cake:
Soak raisins for several hours or overnight in pineapple and juice. Cream butter and sugar until light and fluffy. Add eggs, one at a time, beating after each. Stir in jam. Sift together dry ingredients. Add alternately to cream mixture with buttermilk. Stir in pineapple, raisins and pecans. Pour batter into floured pan, 13 x 9 x 2-inches. Bake at 350° for 50 to 55 minutes.Caramel Icing:1 stick butter1 1/2 c. brown sugar1/3 c. cream1 1/2 c. confectioners sugar1 tsp. vanilla Cook butter, brown sugar and cream together for 2 minutes.
