Ingredients/Components

  • sugar - 1 c
  • eggs - 4 item
  • chopped pecans - 1 c
  • salt - 1 item
  • flour - 2 c
  • flaked coconut - 1 c
  • vegetable oil - 1 c
  • egg - 1 item
  • shortening - 1/2 c
  • ground raisins - 1 c
  • sour milk - 1 c
  • c milk - 1/2 item
  • tsp cinnamon - 1 item
  • tsp nutmeg - 1/2 item
  • pound powdered sugar - 1 item
  • box 18 1/2 ounces white cake mix with pudding - 1 item
  • pkg 3 oz black raspberry flavored gelatin - 1 item
  • fresh or frozen blackberries - 1 c
  • Mix until blended
  • to 5 Tbsp milk - 4 item
  • fresh or frozen blackberries, crushed - 1/2 c
  • orange rind, ground - 1 item
  • tsp soda in flour - 1 item

How to make blackberry cake:

In a mixing bowl, combine cake mix, gelatin, oil and milk. Mix until blended. Add eggs, one at at time beating well after each. Fold in the blackberries, coconut and pecans. Pour into 3 greased 9 inch round baking pans. Bake at 350° for 25 to 30 minutes or until cake tests done, cool in pans 10 minutes before removing to wire racks.Icing:1/2 c. butter or margarine, softened1 pound powdered sugar4 to 5 Tbsp milk1/2 c. fresh or frozen blackberries, crushed1/2 c. flaked coconut1/2 c. chopped pecans1 c. sugar1/2 c. shortening1 egg1 c. ground raisins1 orange rind, ground1 c. sour milk1 tsp soda in flour2 c. flour salt1 tsp cinnamon1/2 tsp nutmeg Bake at 350° for 30 to 35 minutes.

Glazing for Top: Juice from one orange, add 1/2 c. sugar, stir and pour on cake after you take it for the oven.
