Blackberry buckle
Ingredients/Components
- sugar - 1/2 c
- cinnamon - 1/2 tsp
- vanilla - 1 tsp
- milk - 1/3 c
- butter or margarine - 1/2 c
- salt - 1/4 tsp
- flour - 1 c
- baking powder
- egg - 1 item
- unsweetened blackberries
How to make blackberry buckle:
Sift together 1 cup flour, baking powder and salt; set aside. In mixer bowl beat together 1/2 cup butter and 1/2 cup sugar until fluffy. Add egg and beat until smooth. Combine milk and vanilla in separate container. Add dry ingredients and milk alternately to the beaten mixture. Pour into a greased and floured 1 1/2-quart oval baking dish. Spoon berries evenly over batter. Combine 1/4 cup sugar, 1/4 cup flour and 1/2 teaspoon cinnamon. Cut in 3 tablespoons butter until crumbly. Sprinkle over berries.
