Ingredients/Components

  • clove garlic, minced - 1 item
  • red wine vinegar - 5 Tbsp
  • olive oil - 1/2 c
  • fresh parsley, chopped - 1/4 c
  • green bell pepper, chopped - 1/2 item
  • red bell pepper, chopped - 1 item
  • cans black-eyed peas, drained - 2 oz
  • salt and freshly ground black pepper - 1 item
  • whole grain mustard - 1 2
  • scallions or green onions, sliced - 2 item
  • fresh chervil, chopped - 1/4 c
  • fresh jalapeno pepper, minced - 1 item

How to make black-eyed pea salad:

Combine first 7 ingredients in large bowl. In small bowl whisk together oil, vinegar, mustard, jalapeno, salt and pepper. Pour over pea mixture and serve immediately.
