Black-eyed pea salad
Ingredients/Components
- clove garlic, minced - 1 item
- red wine vinegar - 5 Tbsp
- olive oil - 1/2 c
- fresh parsley, chopped - 1/4 c
- green bell pepper, chopped - 1/2 item
- red bell pepper, chopped - 1 item
- cans black-eyed peas, drained - 2 oz
- salt and freshly ground black pepper - 1 item
- whole grain mustard - 1 2
- scallions or green onions, sliced - 2 item
- fresh chervil, chopped - 1/4 c
- fresh jalapeno pepper, minced - 1 item
How to make black-eyed pea salad:
Combine first 7 ingredients in large bowl. In small bowl whisk together oil, vinegar, mustard, jalapeno, salt and pepper. Pour over pea mixture and serve immediately.Recipe categories: Condiments, etc., Salads, Side dish.
