Ingredients/Components

  • sugar - 1/2 c
  • vanilla - 1/2 tsp
  • salt - 1/4 tsp
  • cornstarch - 4 tsp
  • eggs, separated - 4 item
  • powdered sugar - 2 Tbsp
  • cream of tartar - 1/2 tsp
  • heavy whipping cream - 1 c
  • melted unsweetened chocolate
  • rum or rum flavoring - 1 Tbsp
  • rich milk half and half - 2 c
  • 9-inch pie crust baked or crumb - 1 item
  • gelatin in 1/4 c - 1 Tbsp

How to make black bottom pie:

Soak gelatin in cold water. Scald milk. Combine sugar and cornstarch. Beat egg yolks until light. Stir scalded milk into egg yolks. Using a whisk, slowly add sugar mixture. Cook in double boiler, stirring until mixture heavily coats spoon, approximately 20 minutes. Remove 1 cup custard and add melted chocolate. Add vanilla. Pour into pie crust.

Dissolve soaked gelatin into remaining hot custard. Let cool, do not let stiffen. Add rum or rum flavoring. Beat egg whites, salt and cream of tartar until stiff. Gradually beat in 1/4 cup sugar, 1 teaspoon at a time. Fold into custard and cover the chocolate custard in pie crust. Chill until set. Whip whipping cream. Add powdered sugar. Cover pie with whipped cream. Garnish with slivers of semi-sweet chocolate.
