Black bottom cupcakes
Ingredients/Components
- sugar - 1 Tbsp
- cream cheese - 1/2 lb
- vanilla - 2 tsp
- salt - 1/8 tsp
- water - 2 c
- cocoa - 1/2 c
- baking soda - 1 Tbsp
- vinegar - 2 Tbsp
- sifted flour - 3 c
- egg, beaten - 1 item
- salad oil - 2/3 c
- chocolate bits - 6 oz
How to make black bottom cupcakes:
Combine cream cheese, egg, sugar and salt; mix by hand. Stir in chocolate bits; set aside. Preheat oven to 350°. Sift flour, cocoa, sugar, soda and salt. Add water, oil, vinegar and vanilla, beating well. Mixture will appear unmixable at first. Keep beating. Use muffin tins and paper liners, filling 1/2 to 3/4 full with dark mixture (flour and cocoa). Drop one tablespoon of cheese mixture on top of each one. Bake about 20 minutes. These freeze well. Serves 24.Recipe categories: Desserts, Cakes, Cupcakes.
