Black beans and rice
Ingredients/Components
- sugar - 1/2 tsp
- salt - 1/4 tsp
- water
- pepper - 1/4 tsp
- red wine vinegar - 1/2 Tbsp
- chopped onion - 1/2 c
- plain nonfat yogurt - 2 tsp
- cloves garlic, minced - 2 item
- sliced green onions - 1/8 c
- chopped green pepper - 1/2 c
- chopped tomato - 1/4 tsp
- can tomato paste - 3 oz
- hot cooked rice
- vegetable cooking spray - 1 item
- plus 1/8 c - 1/2 c
How to make black beans and rice:
Sort and wash beans. Place in a Dutch oven. Cover with water 2-inches above beans. Let soak 8 hours. Drain. Coat a Dutch oven with cooking spray. Place over medium-high heat until hot. Add onion, green pepper and garlic. Saute until tender. Add beans, salt, pepper, chopped tomato, water and vinegar. Bring mixture to a boil. Cover, reduce heat and simmer 1 1/2 hours until beans are tender, stirring occasionally. Add tomato paste. Cook an additional 15 minutes. Serve over rice.
