Ingredients/Components

  • sugar - 1/2 tsp
  • salt - 1/4 tsp
  • water
  • pepper - 1/4 tsp
  • red wine vinegar - 1/2 Tbsp
  • chopped onion - 1/2 c
  • plain nonfat yogurt - 2 tsp
  • cloves garlic, minced - 2 item
  • sliced green onions - 1/8 c
  • chopped green pepper - 1/2 c
  • chopped tomato - 1/4 tsp
  • can tomato paste - 3 oz
  • hot cooked rice
  • vegetable cooking spray - 1 item
  • plus 1/8 c - 1/2 c

How to make black beans and rice:

Sort and wash beans. Place in a Dutch oven. Cover with water 2-inches above beans. Let soak 8 hours. Drain. Coat a Dutch oven with cooking spray. Place over medium-high heat until hot. Add onion, green pepper and garlic. Saute until tender. Add beans, salt, pepper, chopped tomato, water and vinegar. Bring mixture to a boil. Cover, reduce heat and simmer 1 1/2 hours until beans are tender, stirring occasionally. Add tomato paste. Cook an additional 15 minutes. Serve over rice. Top each serving with tomato, green onions and yogurt.
