  • dry black beans - 1 pkg
  • pinch of oregano - 1 item
  • bay leaf - 1 item
  • vinegar - 1/4 c
  • green pepper, chopped - 1 item
  • onion, chopped - 1 item
  • cloves garlic, chopped - 3 item
  • olive oil - 1/2 c
  • cooked rice - 1 item

How to make black beans and rice:

Wash and pick beans. Cover beans with water and bring to a boil. Turn off stove and let beans soak for 1 hour. Saute green pepper, onion and garlic in olive oil. Drain beans. Add to pepper and onion mixture. Add oregano, bay leaf and salt. Add water to cover beans and cook 1 1/2 to 2 hours. Add vinegar 5 to 10 minutes before beans are done. Serve over cooked rice.
