Black beans and rice
Ingredients/Components
- dry black beans - 1 pkg
- pinch of oregano - 1 item
- bay leaf - 1 item
- vinegar - 1/4 c
- green pepper, chopped - 1 item
- onion, chopped - 1 item
- cloves garlic, chopped - 3 item
- olive oil - 1/2 c
- cooked rice - 1 item
How to make black beans and rice:
Wash and pick beans. Cover beans with water and bring to a boil. Turn off stove and let beans soak for 1 hour. Saute green pepper, onion and garlic in olive oil. Drain beans. Add to pepper and onion mixture. Add oregano, bay leaf and salt. Add water to cover beans and cook 1 1/2 to 2 hours. Add vinegar 5 to 10 minutes before beans are done.
