Black bean salsa



  • chopped onions - 1 c
  • ground cumin - 1 tsp
  • large carrots - 2 item
  • garlic cloves, chopped - 2 item
  • black beans, cooked - 2 c
  • ground coriander or chopped fresh coriander - 1 tsp
  • yellow zucchini squash - 2 item
  • green or red chili peppers - 3 item
  • to 4 really ripe tomatoes - 3 item

How to make black bean salsa:

Cook beans. I use a pressure cooker; cover with enough water, 3-inches above beans, and cook 15 to 20 minutes. Drain excess water. Blanch carrots and squash. Cut into cubes. Chop tomatoes. Combine. Can use as salsa or as filling for burritos. Combine with rice if desired.
