Black bean salad


Ingredients/Components
- can whole kernel corn, drained - 1 oz
- salt and pepper to taste - 1 item
- olive oil - 2 Tbsp
- pickle relish - 1/4 c
- cumin - 1/2 tsp
- stalks celery, chopped fine - 2 item
- salad vinegar - 1 Tbsp
- bell pepper, chopped fine - 1/2 item
- black beans dry - 1/2 lb
- scallions, sliced thin include green tops - 6 item
- cheese cubes use sharp Cheddar or mix of cheeses - 1 c
How to make black bean salad:
Soak beans overnight; cook until just tender. Drain and cool. Add corn, scallions, celery, bell pepper, relish and cumin. Stir to mix thoroughly. Add vinegar, oil and salt and pepper; mix in. Add cheese last, mixing carefully to avoid breaking up cubes. Makes 6 servings of about 1 cup each.Recipe categories: Salads, Beans, Black beans.
