  • can whole kernel corn, drained - 1 oz
  • salt and pepper to taste - 1 item
  • olive oil - 2 Tbsp
  • pickle relish - 1/4 c
  • cumin - 1/2 tsp
  • stalks celery, chopped fine - 2 item
  • salad vinegar - 1 Tbsp
  • bell pepper, chopped fine - 1/2 item
  • black beans dry - 1/2 lb
  • scallions, sliced thin include green tops - 6 item
  • cheese cubes use sharp Cheddar or mix of cheeses - 1 c

How to make black bean salad:

Soak beans overnight; cook until just tender. Drain and cool. Add corn, scallions, celery, bell pepper, relish and cumin. Stir to mix thoroughly. Add vinegar, oil and salt and pepper; mix in. Add cheese last, mixing carefully to avoid breaking up cubes. Makes 6 servings of about 1 cup each.
