Black bean salad
Ingredients/Components
- salt - 1/2 tsp
- chopped fresh parsley - 2 Tbsp
- black pepper - 1/2 tsp
- chopped green onion - 4 Tbsp
- fresh lime juice - 2 Tbsp
- diced avocado - 1 item
- black beans, rinsed and drained - 2 cans
- chopped seeded jalapeno pepper - 2 Tbsp
- chopped fresh tomatoes - 1 c
How to make black bean salad:
Combine parsley, lime juice, salt and black pepper. Stir well with a whisk. Add remaining ingredients, tossing well. Cover and chill 2 hours. Serve over salad greens. Serves 6 to 8.Recipe categories: Salads, Beans, Black beans.
