Black bean and corn salad
Ingredients/Components
- red wine vinegar - 2 Tbsp
- Dijon mustard - 1 Tbsp
- can corn, drained - 1 oz
- cumin - 1 tsp
- can black beans, drained and rinsed - 1 oz
- extra virgin olive oil - 1 Tbsp
- plum tomatoes, seeded and chopped - 2 item
- chopped cilantro fresh - 1/3 c
- chopped sweet onion, Vidalia or red - 1/4 c
- shredded Monterey Jack cheese optional - 1 item
How to make black bean and corn salad:
Combine olive oil, vinegar, mustard, cumin and cilantro; set aside. combine beans, corn, onion and tomatoes. Drizzle dressing over bean mixture. Stir together gently to avoid breaking the beans. May be topped with shredded Monterey Jack cheese if desirRecipe categories: Appetizers, Sauces, Salads.
