Ingredients/Components

  • flour
  • ground ginger - 2 tsp
  • baking soda - 1 tsp
  • cinnamon - 3/4 tsp
  • ground cloves - 1/2 tsp
  • salt - 1/2 tsp
  • sugar - 2 Tbsp
  • margarine, butter or shortening - 3/4 c
  • egg - 1 item
  • molasses - 1/4 c

How to make big soft ginger cookies:

Combine flour, ginger, soda, cinnamon, cloves and salt. Set aside.

In a large bowl, beat margarine, butter or shortening with mixer on low speed for 30 seconds to soften. Gradually add the 1 cup of sugar and beat until fluffy. Add egg and molasses; beat well. Beat or stir in flour mixture. Shape into 1 1/2-inch balls (1 heaping tablespoon of dough). Roll in the 2 tablespoons sugar and place about 2 1/2-inches apart on an ungreased cookie sheet. Bake in a 350° oven for 10 minutes or until edges are set and cookies are still puffed. Don't overbake. Let stand for 2 minutes. Remove. Makes 24.
