Better than potato salad
Ingredients/Components
- chopped onion - 1/2 c
- prepared mustard - 3 Tbsp
- Salt and pepper to taste - 1 item
- radishes, sliced - 8 item
- hard cooked eggs, chopped - 4 item
- medium cucumber, seeded and chopped - 1 item
- cups cooked long grain rice - 4 item
- cups thinly sliced celery - 2 item
- 1/2 cups fat free mayonnaise - 1 item
How to make better than potato salad:
In large bowl, combine rice, cucumber, celery, onion, radishes, and chopped eggs. Combine mayonnaise and mustard. Mix well. Pour over rice mixture and toss. Cover and refrigerate at least 1 hour. (Serves 12.)Recipe categories: Salads, Side dish, Rice.
