Best ever lemon pie
Ingredients/Components
- sugar
- vanilla - 1/2 tsp
- butter or margarine - 3 Tbsp
- salt - 1/4 tsp
- cornstarch - 6 Tbsp
- water - 2 c
- pinch of salt - 1 item
- vinegar - 2 tsp
- cream of tartar - 1/4 tsp
- lemon juice - 1/3 c
- 9-inch pie shell, baked
- egg yolks save egg whites for meringue - 3 item
- Can use double boiler
How to make best ever lemon pie:
Mix cornstarch, sugar and lemon juice in heavy saucepan. (Can use double boiler.) Add egg yolks, water, vinegar, butter and salt. Cook until thick. Cool. Pour into a baked 9-inch pie shell.Meringue:3 egg whites1/4 tsp. salt1/4 tsp. cream of tartar1/2 tsp. vanilla6 Tbsp. sugar Preheat oven to 350°. Combine egg whites, salt and cream of tartar. Beat until foamy. Continuing to beat, add vanilla. Add sugar by tablespoons (one at a time). Beat until stiff peaks form. Spread over cooled pie filling.
