Ingredients/Components
- rich pie crust dough for 8-inch double-crust pie
- fresh or frozen berries - 3 c
- plus 1 Tbsp - 1 c
- quick-cooking tapioca
- lemon juice - 1 Tbsp
- butter - 1 Tbsp
How to make berry pie:
Preheat oven to 375°. Fit bottom crust into 8-inch Pyrex pie plate. Cover with berries. Mix sugar, tapioca and all of the berries. Drizzle lemon juice over mixture and dot with butter. Top with crust; seal and flute edges. Sprinkle top crust with remaining tablespoon of sugar. Cut steam vents.Bake 45 minutes. Rotate during baking. Bake 20 more minutes. Cool on cooling rack.
