Ingredients/Components

  • sour cream
  • salt - 1 tsp
  • prepared horseradish - 3 Tbsp
  • firmly packed parsley leaves - 1/2 c
  • olive oil - 1 Tbsp
  • fresh lemon juice - 5 tsp
  • heavy cream, whipped - 1/2 c
  • crushed black pepper - 2 Tbsp

How to make beef tenderloin with horseradish sauce:

Horseradish Sauce:1 c. sour cream1/2 c. firmly packed parsley leaves3 Tbsp. prepared horseradish5 tsp. fresh lemon juice1 tsp. salt1/2 c. heavy cream, whipped Make sauce. Puree sour cream, parsley, horseradish, lemon juice and salt in food processor. Fold in whipped cream. Transfer to bowl. Refrigerate 4 hours.

Preheat oven to 450° for 1 hour. Place beef in foil-lined pan. Brush with oil, salt and pepper. Roast 35 to 40 minutes for medium-rare. Let stand 15 minutes or up to 2 hours before slicing.

Slice beef and arrange on platter. Serve with Horseradish Sauce. Serves 12.
