Ingredients/Components

  • sugar - 1 tsp
  • salt - 1 item
  • water - 1/4 c
  • oil - 1 item
  • pepper - 1/4 tsp
  • can tomato sauce
  • ground beef - 1 lb
  • oregano - 1/4 tsp
  • small onion, diced - 1 item
  • zucchini - 3 med
  • shredded mozzarella - 4 oz

How to make beef stuffed zucchini:

Cut squash lengthwise. Scoop out center and dice. Set shells aside. In 12 inch skillet cook meat, onion and diced zucchini until meat is browned and vegetables are tender, adding oil if necessary. Stir in oregano, pepper and half of tomato sauce, half of cheese, 3/4 tsp. of salt. Remove from heat.

Into each shell, spoon some of the meat mixture. In same skillet stir water, sugar, remaining tomato sauce and remaining salt. Arrange shells in skillet and heat to boiling. Reduce heat to low and simmer until shells are tender. Sprinkle remaining cheese over squash, cover until cheese is melted, remove to serving platter.
