Beef stroganoff
Ingredients/Components
- top sirloin steak, cut thick - 2 lb
- butter - 2 Tbsp
- onion, chopped - 2 Tbsp
- flour - 2 Tbsp
- dry sherry wine - 1/2 c
- each: salt and pepper - 1/4 tsp
- mushrooms, sliced - 2 lb
- sour cream - 1 pt
- tomato paste - 2 Tbsp
- paprika - 1 tsp
- clove garlic, minced - 1 item
How to make beef stroganoff:
Pre-fry mushrooms until half done, then add sour cream, tomato paste, paprika and the garlic. Cut meat across the grain in squares (approximately 1-inch). Heat meat with butter and onion in skillet until meat is slightly brown. Stir in flour; add sherry. Cook, stirring constantly, until sauce boils and thickens. Season with salt and pepper.Cover and cook very slowly, stirring frequently, for about 1 hour, or until meat is tender. Do not overcook. Add remaining ingredients; heat and blend well. Serve with noodles. Makes 6 servings.
