Ingredients/Components

  • water - 1 qt
  • ketchup - 1/4 c
  • salt and pepper to taste - 1 item
  • ground meat - 1 to
  • medium potatoes - 5 item
  • shredded cabbage - 2 c
  • small onion - 1 item
  • corn whole kernel
  • speckled butter beans
  • pureed tomatoes no seed* - 1 pt

How to make beef soup:

Peel and dice potatoes and onions. Put in large pan. I use a 6-quart pressure cooker. Add water and tomato puree. Start cooking while you lightly brown meat. Drain meat on paper towel. Add all ingredients in pan. If pressuring, cook for 15 to 20 minutes. If open pan, cook until vegetables are tender. May have to add a little more water while cooking. I serve with cornbread.

*The pureed tomatoes are what I freeze when our tomatoes are in season. Use soft tomatoes and put in pan of water. Bring to boil and when skins burst, they can be peeled. Put in blender and puree. Strain through a strainer with small holes to remove seed. Will need to stir with spoon because it will be thick.
