Ingredients/Components

- chopped onion - 2 c
- oregano - 1 tsp
- can tomato paste
- Italian seasoning - 2 tsp
- olive oil - 2 Tbsp
- black pepper - 1 tsp
- cloves garlic, chopped - 4 item
- zucchini, sliced - 1 sm
- stalks celery, chopped - 4 item
- carrots, sliced - 3 item
- bay leaves - 2 item
- beef stock - 4 qts
- diced potatoes - 1-1/2 c
- Grated parmesan cheese - 1 item
- salad macaroni - 1 c
- head cabbage, sliced - 1/2 item
- sirloin beef, diced - 1 lb
- can peeled tomatoes, diced
- can garbanzo or kidney beans
How to make beef minestrone:
Heat oil in pan. Add meat, garlic, onion and celery. Add beef stock and bring to a boil. Add carrots, cabbage, spinach and spices. Cook for 1/2 hour. Add potatoes and cook 1 - 1/2 hours. Add tomatoes and tomato paste and cook 1 hour. Add beans, macaroni and zucchini, and cook until macaroni is done. Turn off heat and let stand 1 hour.
