Ingredients/Components
- pearl barley - 2/3 c
- medium onion, chopped - 1 item
- carrots, diced - 4 item
- water - 2 c
- can tomatoes - 1 oz
- bay leaf - 1 item
- salt and pepper to taste - 1 item
- ground beef turkey may be substituted
- clove garlic, minced - 1 item
- ribs celery, diced - 3 item
- cans beef consomme - 3 1/2
- can tomato soup - 1 1/2
- minced parsley - 1/4 c
How to make beef barley soup:
Brown ground beef or ground turkey, onion and garlic in Dutch oven until meat is no longer pink. Add barley and remaining ingredients. Cover and cook simmering 1 1/2 to 2 hours. Serves 6 to 8.Recipe categories: Soups & stews, Meat, Beef.
