Ingredients/Components

  • sour cream - 1/2 c
  • butter - 2 Tbsp
  • sliced green onions - 1/3 c
  • can tomato sauce - 1 oz
  • medium noodles - 8 oz
  • chopped green pepper - 1/3 c
  • ground beef - 1 lb
  • cottage cheese - 1 c
  • can tomato paste - 1 oz

How to make beef and noodle casserole:

Cook noodles to package directions. Saute onions and peppers in butter for 3 minutes. Add beef and cook until no longer pink. Drain.

In bowl, combine tomato paste and sour cream. Stir in noodles and cottage cheese. Layer 1/2 noodles and cottage cheese in 2-quart casserole. Top with 1/2 meat mixture. Repeat. Pour tomato sauce evenly over top. Bake at 350° for 30 to 35 minutes.
