Ingredients/Components

  • salt - 1/2 tsp
  • butter - 4 Tbsp
  • paprika - 1/8 tsp
  • tarragon vinegar - 1/3 c
  • yolks of 3 eggs

How to make bearnaise sauce:

Heat vinegar and pour on well beaten egg yolks; set bowl with mixture over hot water. Stir constantly until thick. Remove from heat; add butter a half teaspoon at a time and blend into sauce. Season with salt and paprika. Good served over steak.
