Basque potatoes
Ingredients/Components
- butter or margarine - 2 Tbsp
- salt - 1 tsp
- boiling water - 2 c
- clove garlic, minced - 1 item
- onion, chopped
- carrots, grated - 1/2 c
- parsley, chopped - 2 Tbsp
- celery, chopped - 1/2 c
- beef bouillon cubes - 2 item
- potatoes, peeled and cut into 1-inch cubes - 2 lb
How to make basque potatoes:
Cover potato cubes with water. Let stand while preparing sauce. Melt butter or margarine in large pan. Add onion, garlic, celery and carrots; saute until vegetables are limp. Drain potatoes and add to vegetables. Mix thoroughly. Dissolve bouillon cuRecipe categories: Side dish, Potato, Vegetables.
