  • butter or margarine - 2 Tbsp
  • salt - 1 tsp
  • boiling water - 2 c
  • clove garlic, minced - 1 item
  • onion, chopped
  • carrots, grated - 1/2 c
  • parsley, chopped - 2 Tbsp
  • celery, chopped - 1/2 c
  • beef bouillon cubes - 2 item
  • potatoes, peeled and cut into 1-inch cubes - 2 lb

How to make basque potatoes:

Cover potato cubes with water. Let stand while preparing sauce. Melt butter or margarine in large pan. Add onion, garlic, celery and carrots; saute until vegetables are limp. Drain potatoes and add to vegetables. Mix thoroughly. Dissolve bouillon cu
