Basic fish stock
Ingredients/Components
- salt - 1 tsp
- water - 2 qt
- peppercorns - 8 item
- juice of 1 lemon
- white wine - 1 c
- carrots, sliced - 2 item
- bay leaves - 2 item
- onion, chopped fine - 1 item
- celery stalks, chopped fine - 2 item
- parsley stems - 6 item
- pinch of leaf thyme - 1 item
How to make basic fish stock:
Combine all ingredients with water and cook for 1/2 hour. Add fish heads and bones (about 1 pound) and simmer for 15 more minutes. Strain. Makes 2 quarts. Fresh stock will keep for 3 days or may be frozen for future use.Recipe categories: Soups & stews, Fish, Stocks.
