Ingredients/Components

  • salt - 1 tsp
  • water - 2 qt
  • peppercorns - 8 item
  • juice of 1 lemon
  • white wine - 1 c
  • carrots, sliced - 2 item
  • bay leaves - 2 item
  • onion, chopped fine - 1 item
  • celery stalks, chopped fine - 2 item
  • parsley stems - 6 item
  • pinch of leaf thyme - 1 item

How to make basic fish stock:

Combine all ingredients with water and cook for 1/2 hour. Add fish heads and bones (about 1 pound) and simmer for 15 more minutes. Strain. Makes 2 quarts. Fresh stock will keep for 3 days or may be frozen for future use.
