Ingredients/Components

  • butter or margarine - 1/4 lb
  • salt - 1 tsp
  • sliced fresh mushrooms - 3/4 c
  • finely chopped onion - 3/4 c
  • chicken stock - 1 qt
  • barley, washed until water is clear

How to make barley pilaf:

Saute onions in 3 tablespoons butter 4 to 5 minutes. Add mushrooms; saute a few more minutes and remove from pan. Brown barley in remainder of butter, stirring often. Put in casserole; add onions and mushrooms, salt and 2 cups chicken stock. Bake, covered, in 350° oven for 1/2 hour. Add remaining stock; stir and bake 1/2 hour longer. Serves 10.
