Ingredients/Components

  • butter or margarine - 2 Tbsp
  • salt - 2 tsp
  • brown sugar - 2 Tbsp
  • water - 1/2 c
  • vinegar - 1/4 c
  • lemon juice - 1/4 c
  • dry mustard - 1/2 tsp
  • pepper - 1/4 tsp
  • Worcestershire sauce - 1 Tbsp
  • catsup - 1/4 c
  • tomato juice - 1 c
  • medium onions, chopped - 3 item
  • cloves garlic, sliced - 3 item
  • beef pot roast - 4 5

How to make barbecued pot roast:

Rub the surface of the roast with salt and pepper. Brown in butter or margarine on all sides. Add the water, tomato juice, chopped onions and sliced garlic. Simmer for 1 1/2 hours. Mix the remaining ingredients. Add to the meat and simmer for 2 hours.

The gravy may be strained before serving, but it is very good just the way it is. Serves 8 to 10.
