  • Chopped Raisins - 1/2 c
  • Sugar - 1/2 c
  • Cracker Crumbs
  • Egg Yolk - 1 item
  • Butter, softened - 1 Tbsp
  • Dash of Salt - 1 item
  • Lemon Juice - 1 Tbsp
  • Lemon Rind - 1 Tbsp
  • Chopped Walnuts - 2 Tbsp

How to make banbury tarts:

Blend two tablespoons butter with 3/4 cups sugar. Add the juice of one lemon, some grated rind, 2 well beaten egg yolks and one cup of milk. Stir in 2 well rounded tablespoons flour. Last fold in two stiffly beaten egg whites. Bake at 350° for nearly an hour. Serve cold with whipped cream. Serves 6, when baked in a pyrex pie dish.
