Ingredients/Components

  • sugar - 1/2 c
  • dash of salt - 1 item
  • soft butter - 1/2 Tbsp
  • lemon juice - 1 Tbsp
  • grated lemon rind - 1 Tbsp
  • egg yolk - 1 item
  • walnuts or pecans, chopped - 2 Tbsp
  • fine cracker crumbs
  • raisins, finely chopped - 1/2 c
  • pastry for 1 crust pie

How to make banbury tarts:

Mix raisins, sugar, crumbs, egg yolk, butter, lemon juice, lemon rind, nuts and salt. Roll pastry into 12 x 12-inch square. Cut into 9 (4-inch) squares. Spread tiny bit of filling over half of each square. Moisten edges; fold into triangles and press edges together with fork. Prick tops. Bake in a 450° oven until delicately browned, 12 to 15 minutes.
