Banbury tarts
Ingredients/Components
- sugar - 1/2 c
- dash of salt - 1 item
- soft butter - 1/2 Tbsp
- lemon juice - 1 Tbsp
- grated lemon rind - 1 Tbsp
- egg yolk - 1 item
- walnuts or pecans, chopped - 2 Tbsp
- fine cracker crumbs
- raisins, finely chopped - 1/2 c
- pastry for 1 crust pie
How to make banbury tarts:
Mix raisins, sugar, crumbs, egg yolk, butter, lemon juice, lemon rind, nuts and salt. Roll pastry into 12 x 12-inch square. Cut into 9 (4-inch) squares. Spread tiny bit of filling over half of each square. Moisten edges; fold into triangles and press edges together with fork. Prick tops.
