Ingredients/Components

  • shortening - 1 c
  • eggs - 4 item
  • sugar
  • plain flour
  • buttermilk - 1/2 c
  • soda - 1 tsp
  • mashed bananas 2 1/2 to 3 - 1 c
  • chopped Eastern black walnuts - 1/2 c
  • Break eggs, saving white of one egg
  • vanilla flavor - 1/2 tsp
  • sweet milk - 2 Tbsp
  • box confectioners sugar - 1 item
  • egg white left from cake recipe - 1 item

How to make banana walnut cake:

Cream shortening and sugar. Break eggs, saving white of one egg. Sift flour and then measure. Add 1 cup of the flour, then add buttermilk. Now add rest of flour. Add mashed bananas and walnuts. Bake at 350° for 25 minutes, then watch 5 or 10 minutes more. Let cool at least 10 minutes.Icing:1 stick margarine or butter1/2 tsp. vanilla flavor2 Tbsp. sweet milk1 box confectioners sugar1 egg white (left from cake recipe)1/2 c. chopped Eastern black walnuts Melt butter or margarine. Add 1/2 cup confectioners sugar. Beat together. Add egg white and remaining sugar. Beat until stiff or at least mixed well. Now add vanilla flavoring. Slowly add sweet milk while beating. Mix to spreading consistency. Remove beaters and fold in nuts. Spread icing thin.
