Ingredients/Components

  • sugar - 2 4
  • cinnamon - 1/4 tsp
  • nutmeg - 1/4 tsp
  • pineapple chunks - 1 c
  • green grapes - 1 c
  • part skim Ricotta cheese - 1 container
  • small bananas - 4 item
  • fresh raspberries or strawberries - 1 c
  • raspberry low-fat yogurt

How to make banana split salad:

In small bowl with electric mixer at high speed, beat Ricotta about 3 minutes or until fluffy. Blend in sugar and spices. Cover and refrigerate at least 1 hour to allow flavors to blend.

To serve, peel bananas and split horizontally. In each of 4 dessert dishes, place 2 banana halves. With small ice cream scoop, place 2 scoops Ricotta mixture on top of each; sprinkle with fruits. Stir yogurt to blend; spoon 6 tablespoons over each serving.
