Ingredients/Components
- sugar
- eggs - 4 item
- milk - 2 c
- vanilla extract - 1 Tbsp
- cornstarch
- vanilla wafers - 1 lb
- ripe bananas - 4 item
- sugar for meringue - 1 tsp
How to make banana pudding:
Mix sugar and cornstarch. Separate eggs and whites for meringue. Beat egg yellows; add milk and stir. Then add vanilla, sugar and cornstarch. Mix well. Use double boiler, stir together about 10 minutes after water boils. Do not overcook (mix to consistency of Eagle Brand milk). Layer sliced bananas and wafers. Pour pudding mix over bananas and wafers. Mix egg whites and 1 teaspoon sugar. Beat until stiff. Top pudding and brown in oven.Recipe categories: Desserts, Puddings and mousses, Fruit.
