Ingredients/Components
- Fiber One cereal - 3 c
- whole-wheat flour - 1 c
- baking powder - 2 tsp
- salt - 1/2 tsp
- baking soda - 1/2 tsp
- chopped nuts - 1/2 c
- ground flax seed - 1/3 c
- bananas, mashed - 3 item
- maple syrup - 1/3 c
- applesauce - 1/2 c
- water - 1/2 c
- beaten egg - 1 item
How to make banana nut muffins:
Mix the dry ingredients together in a large mixing bowl. Make a "well" in the center. Mix the liquid ingredients together and pour into the "well." Blend together with a spoon until the dry ingredients are thoroughly moistened. Evenly distribute into 12-cup muffin tin. Bake at 350° for 30 minutes or until a toothpick inserted into the middle of a muffin comes out clean. Let cool for about 30 minutes for best texture.This is a moist, delicious muffin loaded with fiber and "good" fats from the nuts and seeds.
