Banana nut bread
Ingredients/Components
- sugar
- eggs - 2 item
- chopped pecans
- sour cream - 1/4 c
- salt - 1/4 tsp
- soda - 1/2 tsp
- almond extract - 1 tsp
- baking powder
- sifted flour - 2 c
- mashed bananas - 1 c
- margarine - 1/2 c
- or 2 tsp - 2 Tbsp
How to make banana nut bread:
Cream margarine and sugar until tight. Add eggs, cream and flavorings. Combine dry ingredients and add alternately with bananas. Use medium speed if mixing with an electric mixer. Stir in pecans and pour in 2 greased 9 x 5 x 2-inch loaf pans. Bake at 350° for 45 minutes to 1 hour. Yields 2 loaves.Note: I use Egg Beaters, nonfat sour cream and skim milk.
