Banana nut bread



  • sugar - 2/3 c
  • eggs - 2 item
  • milk - 1 Tbsp
  • salt - 3/4 tsp
  • chopped nuts - 1/4 c
  • flour
  • baking powder
  • baking soda - 1/2 tsp
  • shortening - 1/3 c
  • mashed, ripe banana - 1 c

How to make banana nut bread:

Stir dry ingredients in a bowl. Set aside. In a mixer bowl, beat sugar and shortening with an electric mixer until light. Add eggs and milk, beat smooth after each addition. Add flour mixture and banana alternately to creamed mixture, beating until smooth after each addition. Fold in nuts. Turn batter into lightly greased 8 x 4 x 2-inch pan. Bake at 350° for 60 to 65 minutes or until toothpick inserted near center comes clean. Cool in pan 10 minutes. Remove from pan. Cool completely. Freezes well.
