Banana nut bread
Ingredients/Components
- sugar - 1 c
- milk - 3 Tbsp
- vanilla extract - 1/2 tsp
- salt - 1/2 tsp
- eggs, beaten - 2 item
- baking powder - 1/2 tsp
- baking soda - 1 tsp
- all-purpose flour - 2 c
- cooking oil - 1/2 c
- ripe bananas, mashed - 3 item
- pecans, chopped - 1/2 c
How to make banana nut bread:
Beat oil and sugar together. Add eggs and banana pulp. Blend well. Sift dry ingredients. Add dry ingredients, milk and vanilla extract to mixture. Mix well and stir in nuts. I do all the mixing by hand with wire whisk. Pour into a greased and floured 9 x 5 x 3-inch loaf pan. Bake at 350° for about 1 hour. Cool well and store overnight before cutting. Good with 6 to 8 ounces of cream cheese and apricot preserves for tea sandwiches. Bananas must be very ripe for best bread. Yields 1 loaf.Recipe categories: Breads, Fruit, Yeast breads.
