Banana coconut bread
Ingredients/Components
- sugar - 1 c
- eggs - 3 item
- sour cream - 1/4 c
- salt - 1/2 tsp
- flour - 2 c
- butter - 1/4 c
- baking soda - 2 tsp
- shredded coconut - 1/2 c
- finely chopped nuts - 1 c
- sliced bananas
- lemon extract or lemon juice - 1/2 tsp
How to make banana coconut bread:
Preheat oven to 325°. Into a large bowl, sift together flour, baking soda and salt; set aside. Put eggs, butter, lemon extract, sour cream and sugar in blender and mix, or mix by hand. Pour egg mixture into flour mixture, stirring thoroughly. Fold in nuts, bananas and coconut. Pour batter into 2 lightly buttered 9 x 5 x 3-inch loaf pans.
