Ingredients/Components
- sugar
- eggs - 2 item
- vanilla - 1 tsp
- salt - 1/2 tsp
- chopped nuts - 1/2 c
- flour - 2 c
- butter - 2 Tbsp
- coconut - 1 c
- soda - 1 tsp
- buttermilk - 1/2 c
- baking powder - 1 tsp
- shortening - 3/4 c
- nuts - 1/2 c
- sifted powdered sugar - 2 c
- mashed bananas - 1 c
- cream - 1/2 c
- Add eggs
- Cook until thick
How to make banana cake:
Cream together shortening and sugar until fluffy. Add eggs. Beat 2 minutes at medium speed. Add bananas. Beat 2 minutes. Sift together dry ingredients. Add to cream mixture with buttermilk and vanilla. Beat 2 minutes. Stir in nuts and coconut. Turn into 2 (9-inch) round cake pans. Bake at 375° for 25 to 30 minutes. Remove from pans and let cool on cake rack. Spread Creamy Nut Filling on layers.Creamy Nut Filling:1/2 c. sugar1/2 c. cream2 Tbsp. flour2 Tbsp. butter1/2 c. nuts1 tsp. vanilla Combine sugar, cream, flour and butter in heavy saucepan. Cook until thick. Add nuts and vanilla and cool.White Frosting:1 egg white1/4 c. butter1/4 c. shortening1 tsp. vanilla2 c. sifted powdered sugar Cream together until well blended, egg white, butter, shortening and vanilla. Gradually add powdered sugar, beating until light and fluffy. (Substitute ice water for egg white if desired. I do.
