Ingredients/Components
- sugar - 2 c
- eggs - 2 item
- vanilla - 1 tsp
- milk - 4 Tbsp
- chopped nuts - 1 c
- flour - 2 c
- butter - 1/2 c
- soda - 1 tsp
- baking powder - 2 tsp
- baking soda - 1 tsp
- shortening - 1/2 c
- all-purpose flour - 2 c
- chopped walnuts - 1 c
- mashed bananas - 3 item
- box confectioners sugar - 1/2 item
- mashed banana - 1/2 item
- pecans, chopped - 1/2 c
- strong coffee - 2 c
- Sun-Maid raisins - 2 c
- apple, peeled and grated - 1 item
- each: cloves, allspice, cinnamon and nutmeg - 1 tsp
- Cool and add icing
How to make banana cake:
Mix together and bake in greased pan at 350°, about 30 minutes. Cool and add icing.Icing:1/4 lb. butter1/2 box confectioners sugar1 c. chopped nuts1/2 mashed banana2 c. sugar2 c. strong coffee1/2 c. shortening2 c. Sun-Maid raisins1 apple, peeled and grated1 c. chopped walnuts2 c. all-purpose flour1 tsp. baking soda2 tsp. baking powder1 tsp. each: cloves, allspice, cinnamon and nutmeg In large saucepan, simmer the first 5 ingredients for 10 minutes, stirring occasionally. Cool 10 minutes. Blend together the remaining ingredients and stir into mixture. Pour batter into a well-greased and floured 13 x 9-inch pan. Bake at 350° for 25 to 30 minutes. Cool and dust with powdered sugar, if desired.Note: Two cups water may be substituted for the coffee. Diced candied fruit may be added for an easy fruitcake.
