Baked vegetable omelet
Ingredients/Components
- eggs - 3 item
- milk - 1 c
- salt - 1/2 tsp
- all-purpose flour - 1/4 c
- shredded Cheddar cheese - 2 c
- medium tomatoes, coarsely chopped - 2 item
- shredded pepper Jack cheese - 1 c
- frozen chopped broccoli, thawed and drained - 1 pkg
How to make baked vegetable omelet:
Heat oven to 350°. Layer pepper, cheese, broccoli, tomatoes and Cheddar cheese in an ungreased square baking dish (8 x 8 x 2-inch). Beat milk, flour, salt and eggs until smooth; pour over cheese. Bake, uncovered, for 40 to 45 minutes or until egg mixture is set. Let stand 10 minutes before cutting. Serves 6.Recipe categories: Egg, Breakfast, Omelets and frittatas.
