  • egg, slightly beaten - 1 item
  • pepper - 1/4 tsp
  • grated Parmesan cheese - 1/4 c
  • garlic salt - 1 tsp
  • ground beef
  • bread crumbs - 1/2 c
  • parsley - 1 Tbsp
  • can condensed tomato soup - 1 item
  • leaf oregano, crumbled - 1 tsp

How to make baked stuffed zucchini:

Cut zucchini lengthwise; scoop out seeds and pulp, leaving 1/4-inch shell. Put shells in a large saucepan with boiling salted water to cover. Gently boil for 5 minutes. Drain. Line pan with foil. Combine next 8 ingredients in a small bowl. Mix well. Spoon into shells. Place zucchini on foil. Sprinkle with cheese and seal foil. Cook at 400° for 1 hour. Garnish with parsley.
