Ingredients/Components

  • salt - 2 tsp
  • ground beef - 2 c
  • bread crumbs - 2 c
  • cans tomato sauce - 2 item
  • onion, chopped - 2 Tbsp
  • black pepper - 1/8 tsp
  • green pepper, chopped - 1/2 c
  • thyme - 1/8 tsp
  • butter or bacon grease - 3 Tbsp
  • small or medium squash - 1 item

How to make baked stuffed squash:

Cut the top from the squash or cut squash in halves lengthwise. Steam until nearly cooked (1/2 hour or more). Remove from the water; scoop out inside about 1-inch all around and all the squash from the top. Sprinkle the inside with salt and add stuffing.

Stuffing: Fry the onion and green pepper in the fat; add ground beef and brown slightly. Add crumbs, cooked squash, pepper, thyme, salt and tomato sauce. Simmer for 15 minutes. Stuff the squash; sprinkle the top with grated cheese. Bake 30 to 40 minutes in 350° oven. Serves 8.
