Baked spinach-topped tomatoes
Ingredients/Components
- pkg - 2 oz
- salt - 2 tsp
- butter - 1/4 c
- eggs, beaten - 2 item
- garlic powder - 1/2 tsp
- grated Parmesan cheese - 1/2 c
- bread crumbs - 1 c
- medium onion, finely chopped - 1 item
- or more tomatoes - 6 item
How to make baked spinach-topped tomatoes:
Halve larger tomatoes. Scoop out centers. Place tomatoes in a 9 x 13-inch dish. Cook margarine and onion 5 minutes. Add spinach, bread crumbs, egg, garlic powder and 1/4 cup cheese. Mound mixture into and onto tomatoes. Sprinkle with remaining cheese. Bake 30 minutes at 350°. Um, um good!Recipe categories: Side dish, Spinach, Greens.
