Ingredients/Components

  • pkg - 2 oz
  • salt - 2 tsp
  • butter - 1/4 c
  • eggs, beaten - 2 item
  • garlic powder - 1/2 tsp
  • grated Parmesan cheese - 1/2 c
  • bread crumbs - 1 c
  • medium onion, finely chopped - 1 item
  • or more tomatoes - 6 item

How to make baked spinach-topped tomatoes:

Halve larger tomatoes. Scoop out centers. Place tomatoes in a 9 x 13-inch dish. Cook margarine and onion 5 minutes. Add spinach, bread crumbs, egg, garlic powder and 1/4 cup cheese. Mound mixture into and onto tomatoes. Sprinkle with remaining cheese. Bake 30 minutes at 350°. Um, um good!
