Ingredients/Components

  • salt - 1 tsp
  • flour - 1 Tbsp
  • oil - 1 Tbsp
  • stick butter - 1/4 item
  • chicken broth
  • bread crumbs - 1 c
  • minced parsley - 1 tsp
  • cayenne - 1/4 tsp
  • mushrooms - 1 c
  • minced green onions - 1 tsp
  • quail - 1 doz

How to make baked quail:

Season quail inside and out. Combine mushrooms, bread crumbs, salt and pepper; saute in butter. Stuff quail with this mixture. Make roux by browning flour in oil. Add stock, onions and parsley to roux and cook a few minutes. Place quail in baking pan and pour sauce over quail. Bake at 325° for 45 minutes or until tender, basting frequently.
