Ingredients/Components
- salt - 1 tsp
- flour - 1 Tbsp
- oil - 1 Tbsp
- stick butter - 1/4 item
- chicken broth
- bread crumbs - 1 c
- minced parsley - 1 tsp
- cayenne - 1/4 tsp
- mushrooms - 1 c
- minced green onions - 1 tsp
- quail - 1 doz
How to make baked quail:
Season quail inside and out. Combine mushrooms, bread crumbs, salt and pepper; saute in butter. Stuff quail with this mixture. Make roux by browning flour in oil. Add stock, onions and parsley to roux and cook a few minutes. Place quail in baking pan and pour sauce over quail. Bake at 325° for 45 minutes or until tender, basting frequently.Recipe categories: Main dish, Wild game, Quail.
