Baked potato soup
Ingredients/Components
- large baking potatoes - 4 item
- oleo - 2/3 c
- flour - 2/3 c
- milk - 6 c
- salt - 3/4 tsp
- pepper - 1/2 tsp
- green onions, chopped and divided - 4 item
- slices bacon - 12 item
- Cheddar cheese, shredded
- sour cream - 8 oz
How to make baked potato soup:
Wash and bake potatoes 1 hour at 400° or until done. Let cool. Cut in half and scoop out pulp. Melt butter over low heat. Add flour. Stir until smooth. Cook 1 minute, stirring constantly. Gradually add milk. Cook over medium heat. Stir constantly until thickened and bubbly. Add potato pulp, salt, pepper, 2 tablespoons green onion, 1/2 cup bacon and 1 cup cheese. Cook until thoroughly heated. Stir in sour cream. Add extra milk for desired thickness. Serve. Sprinkle with remaining onions, cheese and bacon.
