Ingredients/Components

  • large baking potatoes - 4 item
  • oleo - 2/3 c
  • flour - 2/3 c
  • milk - 6 c
  • salt - 3/4 tsp
  • pepper - 1/2 tsp
  • green onions, chopped and divided - 4 item
  • slices bacon - 12 item
  • Cheddar cheese, shredded
  • sour cream - 8 oz

How to make baked potato soup:

Wash and bake potatoes 1 hour at 400° or until done. Let cool. Cut in half and scoop out pulp. Melt butter over low heat. Add flour. Stir until smooth. Cook 1 minute, stirring constantly. Gradually add milk. Cook over medium heat. Stir constantly until thickened and bubbly. Add potato pulp, salt, pepper, 2 tablespoons green onion, 1/2 cup bacon and 1 cup cheese. Cook until thoroughly heated. Stir in sour cream. Add extra milk for desired thickness. Serve. Sprinkle with remaining onions, cheese and bacon. Yields 10 cups.
