Baked potato soup
Ingredients/Components
- milk - 6 c
- sour cream - 8 oz
- butter or margarine - 2/3 c
- all-purpose flour - 2/3 c
- pepper - 3/4 tsp
- large potatoes - 4 item
- shredded Cheddar cheese
- green onions - 4 item
- slices bacon, crumbled - 12 item
How to make baked potato soup:
Wash potatoes and prick several times with a fork. Bake at 400° for 1 hour or until done. Let cool. Cut potatoes in half lengthwise, then scoop out pulp. Melt butter in heavy saucepan over low heat. Add flour and stir until smooth. Cook 1 minute. Gradually add milk. Cook until mixture thickens. Add potato pulp, salt, pepper, 2 tablespoons green onions, 1/2 cup bacon and 1 cup cheese. Cook until thoroughly heated. Then stir in sour cream. Add extra milk if necessary. Serve with remaining onions, cheese and bacon. Yield: 10 cups.Recipe categories: Potato, Vegetables, Soups & stews.
